The Pillot family has been working their estate in the Côte Chalonnaise through six generations over 150 years. In the vineyard and in the cellar they prefer to keep interventions to a minimum, following traditional Burgundian winemaking methods. For the Mercurey Rouge, the fruit is hand-harvested from 60-70 year old vines. The wine spends 14 months in old oak barrels before bottling. The result is light and pretty, with great purity of fruit. Ripe cherry on the palate, with hints of earth and spice, good acidity, and a pleasing finish.
