Sea scallops from Hokkaido, Japan are considered the best in the world. Just ask any sushi chef. Yes, they are sushi grade and will also sear up perfectly every time. The domestic market for scallops is under tremendous downward pressure as the biomass has shrunk quite precipitously over the past five years mainly due to climate changes affecting water temperature. Hokkaido scallops are sustainable and the biomass is healthy. Oh, and did I mention they are considered the best in the world? 10/20 per pound.
